How do I cross out text in latex? Something like $\neq$ but for any letter or symbol?

I think you are looking for \not:

There is also \cancel for the larger things:

On another site, I found this type of cross-out . . .

. . $$\frac{\rlap{//////}(x-3)(x+3)}{(x-2)\rlap{//////}(x-3)} \;=\;\frac{x+3}{x-2}$

It is created with: .\rlap{//////}(x - 3)

\rlap is an over-write command.

. . \rlap{yes}NO produces: . $\rlap{yes}NO$

. . \rlap{NO}yes produces: . $\rlap{NO}yes$

. . \rlap{-----}3ab produces: . $\rlap{-----}3ab$
